Dear Mr. Dohert,
Thank you for taking the time to meet with Stephen Rose and myself on July 27, 2015. It was a
pleasure to meet with you and we greatly appreciated the time you took to walk us through the
Campbell Brewing Company's restaurant, brewery, and perimeter, and to familiarize yourself
with your approved Outdoor Seating Permit and Architectural Approval. For your ease of
reference, I have attached a copy of the pertinent pages from these entitlements, which I hope
you find helpful (see attached).
Per our meeting, we had discussed maintaining a four -foot wide clear path of travel along the
outdoor seating area by replacing several of the four -person tables with two -person tables near
the trees and in tight spaces as shown on the approved site plan (see attached for ease of
reference). You had also indicated that you would work with your janitorial staff to begin
routinely cleaning the outdoor dining area by either steam or pressure washing the outdoor
dining area at least once a week. When cleaning, please be sure to advise your staff that 1) all
work must be completed prior to 11:00 p.m., 2) that no harmful chemicals can be used, 3) storm
drains must be blocked during washing, and that 4) food/debris must be properly collected and
disposed of and not washed down the storm drain. On our site walk, we also observed that your
landscaping planters had been removed, but you clarified that these were already planned to be
replaced with new planters with drought tolerant plants. To assist you in the plant selection

Lastly, we had discussed applying for a building permit to remove and replace the plywood
siding at the Northeast corner of the building with scratch resistant glass to showcase the grain
silo. As the process of getting someone hired, draw up plans, submit to the City for review, and
receive approval, is anticipated to take some time we'd recommend getting started on this
process now rather than postponing until after the Oktoberfest Festival. The temporary banners
which are in these corners of the building help provide temporary cover for the plywood, but

should not be viewed as a permanent solution and need to be removed. Temporary banners are
typically not permitted to remain longer than thirty -days, but would be allowed to remain so long
as we are able to demonstrate continued progress toward resolving the plywood with a more
permanent/glass solution. When drafting up plans for the silo, please consider using soft lighting
(where used to showcase the silo) as to not disturb the residents above Aqui's across the street.
As a next step, we recommend preparing a schedule that we can expect certain activities to start
(e.g. cleaning sidewalks) or be completed (e.g. hiring drafter, submitting for building permit,
installing glass).
